I was mostly back on track today. I struggled a bit with choices, because our fresh produce supply was down to nothing. I think one of my biggest tip for anyone on any diet program is to make sure you have the things you need readily available. It’s much easier to stick to the plan!

The Harvest Nut Bar is growing on me. It’s not that I ever didn’t like it, but I’m finding the texture is interesting in a good way and it’s surprisingly sweet. Sometimes I really crave that sweet start to my day.

I kept the snack simple with cottage cheese and a can of light peaches.

I have to say it again… the lunch cup Fettuccine Alfredo is a thousand times better than the Chicken Alfredo dinner selection. I didn’t do the cup in the lunch crock this time because I decided on my meal at the last minute. I had a few tough noodles but not enough to make it bad. I added pieces of pre-cooked chicken and steamed broccoli to punch up the flavor and add protein and veggies.

IMAG3038Our schedule was a bit off today because of the holiday, so it’s no surprise that I wanted my dessert earlier and to save my meal for later when it was cooler. The Chocolatey Nougat Bar was a bit melted from the heat in the house and it ended up tasting even more like a Snickers bar. :)

I had the Cavatelli With Broccoli Pesto for dinner. It comes as a frozen dinner with a steam pouch. I wasn’t able to have this last month, because the package was damaged in shipment.

It came out mushy and smelled fishy… which was odd, because I don’t think there is fish in it at all.The broccoli came out almost all as a paste, as you can see in the photo to the right. The pasta was slimy and too soft.

With all that said, the flavor wasn’t as horribly as I was anticipating. It was bland, but that can be remedied. If the texture had some improving, it would be much more palatable.

Overall, not a perfect day but a big improvement on my last week.

Today’s menu consisted of 1,608 calories, 83 grams protein, and 43 grams of fat.
