I actually had a good day! I got right back on track and ate well. It’s about time to do some grocery shopping again, so my meals are not as abundant on veggies as usual. I haven’t even been getting in a piece of fruit because our strawberries molded really fast and we had to toss a bunch and the apple I intended to eat today was all bruised and gross. Oh well… we should be getting back to the store soon.
The Banana Nut Muffin for breakfast. I was behind schedule a bit and not really hungry, so I kept it simple. It was very moist this time and I didn’t have to battle the cat for it like I do the Blueberry version.
I was feeling pretty hungry by lunch time, so I had a nice complete meal of the Chicken Fajita Melt, a salad, and cottage cheese. This melt continues to be one of my surprise favorites. I did get a bite of crunch chicken… almost like there was a piece of bone. It was a bit unsettling, but overall it still tasted good.
A quick and simple snack of V8 juice and light string cheese gave me a boost before my son and I headed out for a walk.
I revisited the Broccoli and Cheese Stuffed Chicken Breast for dinner. This item is so easy to compliment with a variety of dishes. I made a few roasted red potatoes… technically not an on-plan food, but I was missing potato… and carrots for sides.
The Zesty Herb Snack Mix was much better this time around. I had a better distribution of the different types of pieces. The flavor on this is a bit strong, but on the up side it makes me drink more water.
Storms rolled in in the evening and the lights kept flickering, so we hunkered down to watch a movie on my laptop. The Prince and I split a plate of whole grain crackers and Laughing Cow cheese spread. I had a V8 to get a little veggie boost. My son took one sip and asked for milk. Haha! Guess it’s an acquired taste for some.
Today’s menu consisted of 1,363 calories, 79 grams protein, and 38 grams of fat.
