Today was an on-track kind of day. The Prince started a piano lesson program designed for toddlers in the evening. We had time to eat a small meal together before we left, got in a bit of shopping after his class, and got home in time for the next meal.

I’ve been getting up a little early… when the kiddo sleeps properly… to do my fitness minutes. So far, it has just been 30 minutes daily on my FitDesk bike. According to my heart rate monitor, I’m burning about 225-250 calories a session. I plan to add in more variety and a resistance routine next week.

I’m still struggling with my calorie count, but I’ve contacted my counselor to see if I’m okay where I am. Today’s total came to 1330 calories and 30 grams of fat. As you’ll see, I had a lot to eat and I ended my day feeling completely stuffed!

I began my day with a Turkey Ham and Cheese Omelet. This is one of the frozen selections from Nutrisystem. I was surprised how good a microwaved egg could taste. The ham and cheese was flavorful and filling, but I really wish I hadn’t actually seen it. It was as though they tossed everything in a blender and pureed it. It reminded me of baby food! This is all purely me being weird… I really did enjoy the taste and would order them again… but I wish the contents more closely resembled their usual form.

I snacked on a simple bowl of Greek yogurt and peaches. This was my first experience with Greek yogurt. I took a chance with it, because it is packed with protein and it has a lot of great uses in recipes. It’s a bit bitter tasting to me, but the peaches added just enough sweetness. Like regular yogurt, I think it’s an acquired taste.

I did another frozen selection for lunch. The Italian Style Turkey and Sausage Melt suffered some breakage in transit to my house. I was going to bake it in the oven, but I decided to microwave because of the breakage… I didn’t want it to bubble out all over the cookie sheet in the oven. Visually, this reminded me a bit of a Hot Pocket. The flavor is SOOOOO much better! I was surprised how spicy it was, because most of the dishes are a bit milder and allow for spicing up. The bread casing was soft like a bun. I felt like I was eating a spicy meatball sub.

I snacked on leftover rice from yesterday. Along with the Laughing Cow cheese and broccoli that was in the rice, I added a serving of extra-lean bacon. I found real bacon that is already cooked and crumbled and ready to be added to a dish. It’s only 35 calories for a tablespoon! That doesn’t sound like much, but it goes really far. I added an extra veggie serving with a V8.

I made the Meatloaf and Mashed Potatoes for dinner. I expected the meatloaf and gravy to be separate from the potatoes, but I found it rather oddly packaged. The potatoes were on the bottom of the dish. That was topped with the slab of meatloaf. Over it all was the tomato-based gravy. The flavor overall was not bad, but I would have preferred a brown gravy. I’m not a fan of tomato gravy over potato. The meatloaf was definitely not like my mom makes, but it was the highlight of this dish. I added a side of peas and carrots for two more veggie servings.

I finished my day with the Red Velvet Whoopie Pie. I have never had Red Velvet cake before, so I have nothing to compare it to… but I found this very good. The cream cheese frosting complimented it very nicely. It was a great end to my day.

Today’s menu consisted of 1330 calories, 97 grams protein, and 30 grams of fat.
