{Pinteresting} Pilgrim Hat Cookies

I first saw the Pilgrim Hats in my Facebook feed when a friend shared the recipe and I thought they were adorable and clever. Since then, I have come across numerous variations on Pinterest. I decided to keep it simple with cookies, peanut butter cups, and icing.

The majority of projects that I saw on Pinterest used the fudge stripe cookies flipped upside down and I went to the store in search of those, but we found some wafer-thin solid chocolate cookies with a scalloped edge. Lord Tyrneathem and I both thought they would work even better. Mini peanut butter cups are always easy to find… we know right where they are. ;)

I grabbed an icing pouch, because I didn’t feel like messing with piping bags and all that jazz. Joke was on me! Turns out my decorating tips didn’t fit the icing pouch, so I had to empty it into a piping bag anyway. I could have just made my own icing or bought a whole container of frosting to tint myself at a fraction of the cost. Dur!

Assembly is super-simple. Pipe a swirl of frosting on the top of the peanut butter cup. Place it top-down in the very center of a cookie. Pipe a thin line of icing at the join between cookie and peanut butter cup. Add a “buckle” with icing.

Et voila!
